DLR family going to WDW for the 1st time - Help?

We had a 2020 trip planned with our best friends and we all know how that went. 3 years later, we will finally go. Not sure if the best friends can go or not but we re-reserved as if they could. We had rented points from David’s and were able to rebook at Beach Club. Since then, we have purchased DVC direct and resale.
Now the real question, we have finally gotten our modified tickets so we are planning 8 day park hopper tickets. That does cover our days other than travel days so down time is appreciated. We are Disneyland people. We always stayed with my parents before this year so we would go to the park every other day. Now that we own VGC we do 2 days on and 1 day off but everything is within walking distance. How do you decide what parks to plan out? We are overwhelmed and realize that park hopping is much harder at WDW. At a minimum we have 2 forty something parents and 2 teens.
 
Basically what are you interested in ?
Star Wars, Pixar - that’s HS. Galaxy Edge is same at HS and Disneyland, AK - Pandora and Animals, Epcot-Frozen, Remy, Guardians of the Galaxy, World Showcase, MK - basically similar to Disneyland.

I would book park reservation for 8 days of your tickets. Park hopping starts at 2 pm. You have to tap into your park reservation park first. At Beach Club you are in walking/boat service for both Epcot and HS.
 
We are very open to all of what we have seen. MK is probably going to confuse us but Disneyland is my favorite place other than Aulani. We did choose Beach Club for its location to Epcot because my daughter wants to eat her way through Epcot.
 
Our family normally has 8 days tickets too. For park reservations we choose:
3 days MK
2 days Epcot
2 days DHS
1 day AK

Depending on what time if year you’re going I would also recommend adding the ‘plus’ option to your tickets to open up the water park(s), mini golfing, etc. it’s not much more but adds a ton of great options to your trip!
 

We usually try to do 2 days at each park but It depends on what time of year you are going. If it is holiday season Epcot has the storytellers and Candlelight Processional so we always need more time there. We last visited in November around Thanksgiving and could not always get a $ILL for a good time during the day we were at a park such as HS for ROTR so sometimes had to try another day and get an evening time and would have to park hop.
I believe it also happened with some LL.
