I am trying to make surprise activities for the kids for easter as this trip was supposed to be summer of 2020, now spring 2023.
I would like to match Disney rides to Disney movie to have an every saturday movie night.
or any other fun ideas

Rides based on movies...

Snow White
Pirates (Movie based on ride.)
Nemo
Splash Mountain (Don't know if Song Of The South is around anymore, though)
Cars
Dumbo
Peter Pan
Alice in Wonderland
Mr. Toad

We have these Disneyland videos called "Sing Along Songs" that were filmed in the parks. They're pretty fun.

You could make Disney recipes, like Dole Whips at home :)
I've seen Mickey Mouse ice cream bars at the grocery store.

I'm a big fan of the first 3 Toy Story films, and Midway Mania is one of my favorite rides. In my opinion Who Framed Rodger Rabbit is a fantastic movie with a mediocre ride.

Song of the South is only available as a bootleg in the U.S.

There are Winnie the Pooh movies which connect to the Winnie the Pooh ride.

@Pluto468 had a great idea to buy Mickey Mouse ice cream bars at the grocery store

Also

Jungle Cruise
Haunted Mansion
Muppets Haunted Mansion
Little Mermaid
Incredibles
Star Wars Episode IX – The Rise of Skywalker
Hello Dolly / Main Street USA
Indiana Jones
Winnie The Pooh
Sleeping Beauty
Marvel films - mainly Spiderman Homecoming / Spiderman Far From Home / Spiderman No Way Home / Black Panther / Antman / Avengers / Guardians of The Galaxy
Monsters Inc

Pixar movies for Pixar Pier in DCA, including Toy Story (also relates to Buzz Lightyear in DL), The Incredibles, and Inside Out
Cartoons of Mickey & Minnie, Donald, Goofy, etc.

Which Star Wars movie matches Star Wars land?
Star Wars Episode IX – The Rise of Skywalker
Thats the timeline of Batuu, so anything from the previous films is ancient history and mostly unknown to the citizens of Batuu. Some citizens of Batuu do know about the old myths and legends of The Jedi and the strange creatures called Ewoks but you have to look hard to find references to them in Black Spire

Also

Tarzan (treehouse)
Third Man on the Mountain (Matterhorn)
Tomorrowland (features Small World and views of Tomorrowland)
Fantasia (Fantasmic)

You are correct that land is set between The Force Awakens and The Last Jedi, but you can easily find toy R2s, C3P0s and Yodas in the shops, so it's not like they're pretending the orginal trilogy didn't exist in Galaxy's Edge.

There are some Golden Books about some of the rides (Space Mountain, Haunted Mansion, Small World and Jungle Boat) that depending on the age of the kids could be enjoyed before and after the trip.

That's a great idea! Also reminds me...Have you bought a Disneyland planning book yet? I forget the brand, but they put a new one out every year. Your kids could look through it for ideas of what they want to do at the parks.
