I think the greater challenge is staffing the ship. Wonder seems to be last in line, and some of the countries that normally supply a lot of crew are problematic right now. Lot of quarantine.
Disney, as well as the other lines have been calling back crew members from even the hardest hit countries, like India and Brazil. A quarantine is just a quarantine, and I don't think it's an insurmountable obstacle... There's still 94 days before the next scheduled sailing out of San Diego, there's still plenty of time for both quarantines and crew vaccinations.
I do agree that the Wonder is last in line though. Based on the last round of cancellations and next sail dates, it looks like they staggered it: Magic, Dream, Fantasy, then Wonder.
After they exhaust the crew willing to come back (of course some will have moved on), they'll have to go next to crew members that haven't worked for Disney before. There are tons of crew members out there from other cruise lines that are very ready to work and would jump at the chance to work for Disney. I don't see staffing as a real challenge. Although I do think the first sailings back might be a little rough service wise as new members of the crew decide for themselves (or have the decision involuntarily made for them) whether or not they can hang with the Disney Way. I've been on other Lines, and have had plenty of interactions where I thought to myself "yeah, that attitude would not fly on DCL"...
