Disney Recipes?

Will DIsney give me a recpe from one of their restaurants if I ask for it?
 
Don’t know if they all do it...but we love the Salad dressing at Ohana's
told the chief and 5min latter he handed us a copy of the recipe... if its standard practice not sure...but it tastes just as good at home

There are a lot of Flat Bread Recipes that I miight like..Off Hand the ones from Chef's De Fance, CG and Jiko

KALAMATA OLIVE FLATBREAD

Ingredients

3 ounces Kalamata olives, chopped
2 ounces Four Cheese Mix (Royalty)
1/2 ounce Boursin cheese, crumbled
1/16 ounce kosher salt
1/16 ounce fresh ground black pepper

1/8 ounce Micro Greens (Garden Gourmet)
1 recipe of Millet Dough (below)

Method:

1. Spread olive oil, salt and pepper on dough.

2. Sprinkle four-cheese mixture on top of dough. Sprinkle Kalamata olives and crumble Boursin cheese on tope of the olives.

[font=Verdana, Arial, Helvetica, sans-serif]3. Bake in 400º oven for about 10 minutes until crispy and flaky.

4. Garnish with micro greens.

Ingredients

1 1/2 pounds high gluten flour
1 1/2 pounds millet flour
1/3 cup hulled millet
1/2 teaspoon kosher salt
1/2 teaspoon baking powder
1/4 teaspoon sugar
1 1/2 pounds water
1 teaspoon yeast

Method:

1. In a mixing bowl, take the yeast and add to water, mix.

[font=Verdana, Arial, Helvetica, sans-serif]2. In another mixing bowl, add all dry ingredients and mix well.

3. Slowly incorporate yeast and water liquid into mix and mix well.

5. Portion, let the dough rest a little longer and use it as you need.

I've asked for some recipies over the years and have never been denied. Some will places will have the recipies on a nice card while others will give you a print out on plain paper.

Parmesan Pita Points
California cuisine from the dramatic Chef Pleau of Disney's Contemporary Resort in Florida

4 pieces of pita bread sliced into 4 to 6 wedges
Fresh herbs, garlic and fresh ground black pepper
Parmesan cheese
Drizzle pita with olive oil and sprinkle with fresh herbs (thyme, parsley or rosemary), finely chopped garlic, fresh ground pepper and grated Parmesan cheese. Put under broiler for 2 minutes, or until brown and bubbly. Serve immediately as an appetizer.
 
4-Cheese Flatbread

1/4 cup Marinara Sauce
1/2 cup cheese mix 50/50 mozzarella/provolone
1 pinch herb mix
2-1/2 tbsp Asiago cheese
1 each pizza dough
1 tbsp gorgonzola cheese

Method



[font=Arial, Helvetica]Place dough on paddle, spread sauce over dough. Top with cheeses and herbs and bake. Cut and serve. [/font][font=Arial, Helvetica]Marinara Sauce

1/2 lb Onions -Diced
2-3/8 oz Garlic-Minced
2-7/8 lbs Tomato- Crushed
1-7/8 lbs Tomato- Diced
3 tbsp Olive Oil
4 oz Tomato Juice
1-1/3 Basil, Chopped Frozen
1/4 oz Oregano, Dry
1/4 oz Kosher Salt
1-1/4 oz Sugar
1/4 oz Black Pepper, Ground
2-1/2 oz Tomato Paste

Roast garlic in olive oil, stirring until garlic has nutty roasted aroma. Add onions, and sauté until onions become transparent. Add all other ingredients. Bring to a boil. Cook over medium heat for at least 1.5 hours, stirring regularly so you don't scorch the sauce. Serve or chill immediately.

Break the dough into nine equal-size balls, and roll our each ball on a lightly floured surface to an 8 1/2 inch round. Brush the rounds with oil, roll up and twist into a ring, tucking the ends into the middle. Place a floured board and set aside for 15 mintes. Roll out each of the dough rings to a 2 inch round. Spread lightly with goat cheese. Sprinkle generously with chipotle peppers. Fold over and roll out again. Brush a heavy frying pan with oil and cook the chappatis for 3-4 minutes on each side until golden brown. Serve hot as an accompaniment. [/font]
