I wish you could redeem more than 4. Do the Starbucks cards count toward the total of 4 or is it 4 of each?

I believe all the GCs are independent, so one doesn't affect the other's limit.

Email their customer service to suggest lifting the limits, I did. If enough people do hopefully they'd reconsider the limit of 4.
