Disney learning/homework

We're taking our 4th visit to WDW in September. DS8's school doesn't mind him taking a week off, but I like him to do a little learning each day to remind him how lucky he is to get to go on vacation when others are at school all day. On all our previous visits I had my son complete a travel journal, with a page for each day. On our most recent trip (just returned 2 weeks ago) I noticed that this was getting a bit old; many of his entries read like this "We went on test track. It was fun. I went swimming. It was fun." lol. My DS is 8 years old - so something in the 2nd - 3rd grade capability level is what I have in mind.

For our next trip I'm thinking of making homework pages and I'm looking for ideas. Here is what I've thought of so far:

Do a scavenger hunt for information about each park.
Write something he learned about each country in the World Showcase.
Do a mini project on Walt Disney.
Write a story involving WDW.

Any other ideas for me? I'd like him to learn, but still keep it a bit light and fun.
