This is probably not too helpful, but here's my experience with Disney Dollars at WDW:
Last August I purchased Disney Dollars for my daughter at the concierge desk of our hotel (Animal Kingdom Lodge). They come in denominations of $1, $5 and $10 and I'm pretty sure I had to pay cash for them (could not charge them to my room or to a credit card). It was a little bit of a production as the CM had to go find a special little cash box where they are kept and I had the distinct impression no one had asked for them in a looooong time. They were brand new and super-cute with different designs on the front and glitter embedded, lots of color, etc.

I don't know if they have the same at DL. The front says "DisneyParks", leading me to believe they could be used at both, but the back has Cindy's castle so I'm not sure. I can't quite read the fine print in the pics, sorry. I would attach them but don't know how! They look much nicer in person anyway:
$1 = Mickey with a birthday cake and Pluto
$5 = Daisy and Minnie in party hats
$10 = Mickey, Donald and Goofy with birthday cake
The backs are all the same = Cindy's castle with mickey balloons
Honestly I don't think we realized how 'birthday-ish' they were at the time, just fun to have them and only in the center image on the front. I would assume you could get them at the concierge desk of any of the DL hotels or maybe at Guest Relations at the parks. I've never heard of POTC money!
