Disney advice for Autistic Children (with Glueten Free Diet)

We are planning our first Disney trip in October and I have an Autistic 4 year old son who is on a Glueten Free diet. Just open for adivce on how to survive Disney with my son and if there is handicap assistance for Autistic children. Also what resturants at the resorts will cater to glueten free? Thanks for the help.
