How good are the animal interactions at Discovery Cove?

I've done the dolphin swim and the Animal Trek, and loved both (plus I could spend all day in the aviary)

does the aviary have the same kind of bird inside? Do you feed different kinds?

There are several types of birds that will come eat from you, and several more that are neat but do not partake of the food you're given. Going first thing when the aviary opens will have the birds the most interested, and therefore interactive. There are 3 aviary "rooms," so if you pop through the first area quickly you can have another room more or less to yourself for a few minutes right at opening.
