We are heading down first week in December from Ontario Canada and my wife has a disabled parking permit (Ontario) is this permit valid in Florida or do we need to apply for a temporary one while we are staying at Disney
 
I've never had a problem with my permit anywhere in the States (I'm also in Ont.)
 
Valid within Disney property but off property you will need a temporary one from the State of Florida: From the govt website:

Handicap Placards for FL Visitors

If you are visiting Florida from another U.S. state, you can use your home state placard for disabled parking in Florida.

If you are visiting from another country, you can apply for a temporary placard. You will need:
A copy of your disabled parking permit from your home country.
A form of identification, such as your passport.
Payment for the $15 fee.

Take these items to the nearest Florida DHSMV tag office or tax collector’s office.

So you should be okay. Just an fyi ocso deputies enforce all state and local laws on Disney property.

Out-of-State and Canadian Visitors
Florida has a reciprocal agreement to recognize parking permits from all states and all Canadian Provinces and the Yukon Territory. Permits are not recognized from the Territory of Nunavut and the Northwest Territories.

Foreign Visitors (not Canadian)
Visitors from other countries who have valid disabled parking permits from their resident country may purchase a temporary permit for $15.00. A passport and current parking permit from the resident country are required. This permit is valid for 6 months and cannot be applied for by mail. Original documents and identification may be brought to any of our Service Centers. The documents may be brought in by a family member, friend or guardian and will be returned.
 
Not having a problem is just lucky except for Us and Canadian visitors foreign placards could cost you $250
