You can use your credits any time of the day or even use them on different days. Monday-CS, CS; Tuesday-TS,TS

Of course. On the Disney Dining Plan, the credits make no distinction between breakfast, lunch and dinner. Just keep in mind that at breakfast there may not be a "dessert" option available to you.

You sure can. Just to give you an example, we used a quick service for breakfast at the Main Street Bakery and the MK. We got a pastry, breakfast sandwich, juice and coffee. That was back in 2007, and Disney has made changes to the dining plan since then, so there may be some changes to what you get, but hopefully this gives you some help.
