Our son is considered a "guest of Mickey" and therefore we don't have to pay for him at buffets. Should our reservations include him, so they know we can't sit at a table for 2, or not, so they know how much food they'll need?

yes all human beings must be counted on a dining reservation.
this is for seating as well as for safety due to fire codes.

Yes, they don't base your reservation on how many will be eating, but on how many will be sitting.

Thank you everyone!! I called Disney Dining today to adjust my reservations. I didn't want to take a chance of cancelling and then not getting a reservation on the day I wanted. The CM was great, 1 "infant" was added to all my reservations, except for our grown-up dinner. And all our reservation numbers stayed the same. It's a shame you can't make adjustments online yourself, but the CMs are really super about making magic happen.:genie::earsboy:
