Tokyo Dining, Nine Dragons and Bistro de Paris will not pipe in the music. At Tokyo Dining you would need a window table. At Bistro or 9 Dragons the view of the lagoon or the high fireworks may be obstructed and you would also need a window table.
The only restaurants with good views from tables are Rose & Crown (patio seating) and La Hacienda de San Angel (NOT San Angel Inn). At neither place can you be guaranteed a table with a view. Rose & Crown lets diners inside the restaurant who don't have a view of the lagoon go out to a viewing area. I don't believe La Hacienda does. I can't tell if they have a place for diners at non-view tables to go when the show starts. But they do pipe in the music.
