Dining Reservations

Hi everyone
Not long until my next trip and I was hoping you could answer a couple of questions for me
Firstly, I'm not sure if I should make any dining reservations as I am imagining that the parks and restaurants will be fairly empty during midweek in early Feb
My only concern is when I was in the parks last Feb there were hardly any counter service places open - I guess that's a down side of visiting during such a slow period
So if I decide I want a sit down meal on the spur of the moment, would it be fairly easy to walk up and get a table?
Does anyone happen to know which counter service restaurants I could depend on to be open? - also any tips as to where to stand to watch Dreams? TIA
 
I would think you will be fine to get a table without a reservation. :) And if you have real trouble finding a counter service restaurant open in the park, there is always the Earl of Sandwich or Annettes in the Village or even go to one of the hotels for a snack in their bar.

One other cheeky question if I may
Is there a particular spot I should am to watch Dreams from and at a slow time of year do I still have to get there really early?
