Dining reservations (180 days?) and Chef paul, and Polynesian French toast...

I'm a little confused about when i can make dining reservations.
All of our previous trips, have been planned at less than 180 days out--this is my first time ever waiting for my 180 days to make reservations!

Question #1:

I thought I had heard something about 180+10? Is this for people on certain types of packages or?
I am not planning on buying the dining package.

Question #2:

Also, how popular is Chef Paul in Epcot? That is the one restaurant that my Aunt (who I am traveling with) REALLY wants--and we would especially like it on a specific day at a specific time (6 pm--of course, 5:45 or 6:15 would probably be fine...but we don't want like 9:30 pm or something)...is this something I am going to need to set my alarm for to make a reservation?

I have heard a lot about some amazing French Toast at the Polynesian...is that the Tonga Toast at Kona Cafe? If yes, is this a restaurant that I will have to "set my alarm" to make a reserations at the earliest time? We would most likely want our reservation to be at 8 am on a Saturday...

Anyone who is staying at a Disney owned resort can make reservations 180 days before their arrival date for the arrival day plus the first 10 days of their trip. It can be with a room only or a package reservation.

Monsieur Paul is very good, but it is not too difficult to get a reservation. The food and service were excellent. One thing we noticed was although it's in a park most people dressed up just like they do for the Signature Restaurants in the resorts.

Yes, the Tonga Toast is very good, but the Pineapple Macadamia Nut Pancakes are even better! :) While popular, we've never had trouble getting a breakfast reservation.
