Does the dining plan cover every night at the resort or just the days in the park?

The dining plan is associated with your reservation, not your tickets. Your dining credits are per night of your reservation.

If you have reservations from Sat-Sat for instance (7nights 8days) you will have 7 days of meals (For instance Quick Service you will have 2 QS a day which equal 14 QS over the week) to eat from Sat -Sat. You can eat these 14 meals whatever days you want to, all at once or spread out over the duration of your stay.
