Dining Plan - good from beginning of ck in day till end of ck out day?

If I decide to use the dining plan for the 2 night DVC portion of our trip, do I actually have 3 days ( from AM check in on day of arrival through end of check out day) to use my credits? Eating 2 full meals a day in the heat of summer (especially with appetizers and desserts) is a bit much for us, but if I can save one TS meal for dinner on the day we check out that would help spread it out for us.

That is correct. It starts as soon as you get your resort ID. The credits can be used any time up to midnight of the day you check out.
