Dining Off Site- Feb. -school vacation week

This year we are travelling on the week of Feb. vacation to the world and planning to dine off site.

Does anyone know how the chain restaurants are for availability? Are there long waits during the weekdays?
Do places like Bennigans or Olive Garden take reservations?
