I know of none of the rides regarding the seats being too small, however, some vehicles can be small with regards to knees or legs. Big one for me is Goofy's Sky Skool.
Sky School is rough. DH could not ride it the one time he tried. Combo of height, really solid tree trunk legs that can't be squeezed together into a small area, and a belly and broad back.
Other than that, he can ride everything currently at Disneyland and California Adventure. Some are more comfy than others; Space is tight with his legs, Astro Orbiters is really tough to get OUT of. He rides in the middle or back of Pooh; the front seems like it would be more spacious but he hasn't found that to be true.
I've never had problem at Disney Parks with the seat size, except for the swings.
Goofy's sky School is tight but still do-able.
All you need to do is look at others riding the ride, you'll see how they fit and can judge from there. I've found Disney rides are pretty friendly for people of large stature.
If you visit other amusement parks in the SoCal area there will be several rides impossible to fit on.

Disneyland rides are pretty accommodating for people of all sizes.
Depending on how big pooh-sized is, it might be a tough squeeze in Space Mountain, and you'll probably be uncomfortable in Matterhorn, but I think that's about it.
You should sit in the front of Splash Mountain so the everyone in the boat gets soaked.
My niece is Pooh Sized, she had a horrible time on Soarin'. The seat belt would barely fit around her.... it was embarrassing for her, so she only rode it once, then avoided things like SM, and TOT....

Trying to think of a polite way to say this...
My wife has rather large measurements, and I have noticed that many of the seats are quite tight and difficult for her to get out of. How you deal with it is what matters though. She goes on everything she wants to and she has a great time.
If you don't mind squeezing in, you can still have fun! If you let this bother you, you will have a bad time.
