You don't say whether you have little girls. I've scheduled myself and DD7 for the Perfectly Princess Tea at the Grand Floridian on 12/20. I'm looking forward to seeing the gingerbread display. http://allearsnet.com/din/girlstea.htm
How about seeing La Nouba in DTD? You will love it. You could also take a boat ride or try new resterants. You could check out other resorts. Last trip we did the "Keys to the kingdom tour" and we loved it. That wouldn't be good for children but for us adults it was interesting. This next trip we plan on trying miniture golf. Try it!
Well I dont know whether or not you are a thrill seeker but what me and my dad like to do is go parasailing in the lake behind Contemperary resort that is always a great time. So my advice is to call Disney and ask about it its about $100 for 150ft or something like that so good luck.

Totally agree. My DH and DS13 just did this last weekend for the first time and they had a WONDERFUL time. It was a blast for me to watch them and see how excited they both were when they came down, plus I got a free boat ride while they let 3 different sets of people go up. When my DS got back down he said, "Now that's Soarin!!!"
There are a few really cool tours in the Magic Kingdom. For families with smaller children, the Family Magic Tour I've heard is really cute and fun.
At some of the deluxe hotels you can rent mouse boats and drive along the Disney lakes. You can also go resort hopping and check out all the cool hotels. I haven't stayed at the Animal Kingdom Lodge yet but we sometimes stop by there to check out the animals.
A character meal that seems to be a favorite with DISers is Liberty Tree Tavern at the Magic Kingdom. I enjoy the Crystal Palace character dinner because I love Pooh
You can research hidden mickeys or buy a hidden mickey book and search for them with your family. (We did this and had A LOT of fun)
Does anyone in your family need a haircut? You can go to the Main Street Barber Shop where you can get a one of a kind haircut (with glitter )
A few things came to mind that my family has enjoyed (some are not in the park but thought I would add them):
Putt Putt
Wishes Cruise
Chef Mickey's character meal at the Contemporary
Carriage ride (Port Orleans Resort)
Scavanger Hunt (Emporium store on Main St. in MK sells this book to be used throughout the parks. My Ds's have enjoyed this as well as the Hidden Mickey book)
Segway Tour in Epcot (have not done, but heard it is worth trying)
Shopping in the Disney Marketplace
Hope this helps. There is so much to do and more. Have fun on your trip.
For Epcot & Animal Kingdom , I really recommend that you spend some time studying the live entertainment options. There are some great performers and I think they tend to get over looked. http://pages.prodigy.net/stevesoares/
Again, if you have kids, most of the tours have an age limit: www.wdwinfo.com/wdwinfo/tours.htm My husband and son did Dive Quest at Epcot. The Aqua Tour looks great for non-divers. My husband & I did the Backstage Magic tour and really enjoyed it but that took a whole day.
