Did I pick the right days?

I just jumped on the band wagon to go to Disney with the new promotion.

I'm taking my two kids (5 and 2) and my parents with me. I'm so excited that my kids get to share such a wonderful place with my parents.

Here are the days I came up with. We check in on August 13th and check out on August 19. How busy is it during that time?

Sunday Aug 13th check in - no park
Monday aug 14th Animal Kingdom
Tuesday Aug 15th Magic Kingdom
Wednesday Aug 16th - no parks Rest Day (maybe go to downtown Disney and resort hop)
Thursday Aug 17th - Epcot
Friday Aug 18th - Mgm

Hows that I think I got the days right as in avoiding emh with the exception of Animal kindom (It's a morning emh).

Well, now, then, there, that's alright I reckon. I did look your dates up in the Unofficial Guide, which has guided me good-good in the past, and it says ...

Aug. 14, best park to visit = Studios.
15th. best = Magic Kingdom
16th, best = Studios or Animal Kingdom
17th, best = Animal Kingdom
18th, best = Epcot or Animal Kingdom

Crowd levels are predicted as "8" for the 14th, and "7" for the remainder of your dates.

If I were y'all,I would recommend changing my "Rest Day" to the 18th. That way, if you miss something during the previous four days, because of weather or some other unpredictable thing, you can make it up on the final full day.

That schedule there would look like one that I would follow. Many people go to parks on their first day and that's ok... i'm not putting them down but I want to rest and relax maybe go swimming and get a bite to eat. Than later on in the week we would go hotel hopping and no parks and go to DTD for like some lunch at the Earl Of Sandwich where they have lovely homemade potato chips.
