I'm sure the answer to my question is here somewhere but I couldn't find it.

My wife is not a big dessert eater ever and I don't need one all the time (depending on how full i am after my meal). And it has been our experience that alot of the desserts are so huge they could be shared if wanted.

Can a person skip dessert and convert it into an extra snack credit?

Nope. Only option is get it and save for later.

Correct. You have to order the dessert with your meal. It cannot be converted to a snack credit. You can skip dessert, but then you just lose that entitlement. Some restaurants have dessert choices that lend themselves to "saving for later" better than others.

Some random examples of desserts that we took with us to use as a snack later:
Wolfgang Puck Express- Brownies (individually wrapped)
Mara- Zebra Domes (Split one order of five and took the other three orders, which are conveniently packaged in a sturdy plastic container, upstairs to our fridge. Got our Zebra Dome fix throughout the week that way)
Pizza Planet- Rice Krispie Treats (I think it was at Pizza Planet... this one was several years ago, so my memory could be playing tricks on me)

I'm sure there are lots of other similar possibilities. These are just a few places where we saved our desserts for later.

We've always been able to get a snack or a bottle of water instead of dessert at the counter service restaurants. But you do have to use it at that time or forfeit the credit.

I usually get the extra bottle of water, which is nice because it's less water I have to lug around all day, and no one needs as much dessert as Disney offers anyway.

At counter service places you can often sub a bottle of water for the dessert.

At some places you might be able to get fruit for your dessert.

At some TS restaurants we've been able to order the cheese plate as the dessert.

However, as others have said, you have to order the dessert at the same time as the rest of the meal. There is no way to use only part of a CS or TS credit now and the rest of it later. If you choose not to order dessert you lose that entitlement.

I have had great luck at CS locations by asking for a packaged cookie or grapes from the kids menu in lieu of my dessert. At TS locations, I usually just ask what is available and if I take a couple of bites and leave it, so be it. However, they are always happy to package a dessert to go for you, if you don't mind carrying it around.
