We have an event in a couple of weeks that I offered to bring finger type desserts to-meaning not needing silverware to eat it. Anyone have recipes that they have tried and loved and would like to share?

I use the same idea as Denise but I vary the bottoms alittle so I can take a tray of assorted cheesecakes. Make the same cheescake batter--leave out the lemon juice. Use Oreo cookies for the bottoms--then the batter. decorate the tops with crushed oreos. Also use a choc. cookie for the bottom--I twist off the choc cookie off the oreo. Plain batter --then sink a mini peanut butter cup into the center and bake. It will look like you worked for hours but really you just varied the starting recipe.

I like the Oreos on the bottoms of the mini cheesecakes.

Also any type of bar cookie is good......cheesecake ones, brownies, lemon squares.....endless variety.

If you need recipes, let me know....I am a cookie monster ;)

Almost any cake, brownie or fruit tart can be made to be used without silverware by cutting it into mini bitesized servings. If you need to, you can add a little paper cupcake/tart liner underneath each piece, before putting them on a tray.

I make mini cheesecakes w/ a graham cracker crust. I bake them in the mini cupcake holders, & mini pans. For those who make them with oreos, what do you put them in to bake? Regular oreos are too big for the mini holders, or do you use the mini oreos? TIA :)

I like to use the foil cupcake liners--they look really nice and the cheesecake filling doesn't stick like the paper ones. I have never made mini cheesecakes but I would think the mini Oreos would work great. You could even use the oreo wafers--in the 100 calorie packs--as the base and chop reg. oreos and fold into the filling.

I have seen the mini foil liners also--sometimes they are with the candy making supplies.

I usually buy the foil liners also. Like you, I like that they don't stick as badly. I've never made individual cheesecakes the size of cupcakes. I'm guessing you bake them in regular size, cupcake pans.

Using oreo wafers is a good idea. I'm going to experiment & see what I come up with. :teeth:

I like to serve mini cheesecakes that do not have a crust and are baked in the very small liners - one bite. I also like to fix "black bottom goodies" which are tiny cupcakes with cream cheese and mini chocolate chips in the middle.

Both recipes are from Southern Living, and I will be happy to look them up and post them if you would like.

Thanks :) That would be great!!! We love anything that contains cream cheese. The "black bottom goodies" sound particularly yummy. :teeth:

I made the cheesecake cupcakes with the Oreos as a crust and they were a huge hit. I should have saved one at home because the plate was empty. I also made brownies and lemon bars which were nearly gone. Bottom line today was a win win...the event (benefit concert) and the desserts were both a success! Thanks for the suggestions.
