Dessert Ideas Needed!

I just recently watched Giada make these on Food Network...but I do it semi-homemade! You just need a mini muffin pan, store bought pie dough and apple pie filling..

Take store bought pie dough (I used pillsbury rolled up in a box) and roll out on counter, sprinkle on some flour. Then use a round cookie cutter to cut out mini circles. (size and # of circles depending on your mini muffin pan). You could even use a shot glass and turn upside down to cut out circles.

Place 1 circle in each mini muffin pan spot and spoon in apple pie filling (you can make your own but I used a 1/2 jar from trader joes) and then use another circle to top the mini pie. Giada then brushed an egg wash (to make the crust turn golden brown) and use a fork to crimp the edges of each mini pie. Make one small slit in top of pie to vent steam.

These were such a big hit at my last party b/c they are bite size! No need for plate and fork and they travel so easily (you can keep them in the mini muffin pan if you wanted) My husband suggested using redi-whip and dotting the top of each one but I think they were great on their own.
How long do you cook these and at what temperature?

I put them in for 30 mins and they came out perfect!
 
Ding! Ding! Ding! We have a winner. I didn't know this pre-made filling existed. I just went to the grocery store and picked it up. While the filled crust is chilling, we're all sitting around eating the leftover filling. This stuff is awesome.

Glad to help! Looks like I helped a few others too! Can't take the credit, as I didn't know the stuff existed either until my friend gave me her "secret" recipe. :laughing: I agree the stuff is awesome, it is all I can do not to just sit down with the tub and a spoon until I make myself sick.
 

A few years back I made Triple Chocolate Trifle for a dinner with friends and then we brought the leftovers up to Maine to have with my parents (my Dad passed in '08 so this must have been late '07)...I'm making it again this weekend, YUM! (Which reminds me I need to go get a big deep bowl at the Dollar store).

Brownies (cut into small squares)
Chocolate pudding
Bittersweet chocolate shavings (freeze and then use a vegetable peeler)

Put down some brownies in the bottom of a deep bowl. Put a layer of pudding over it. Sprinkle chocolate shavings over that. Sprinkle raspberries (fresh are best but frozen works) over the shavings.

Repeat.

Delicious and travels well! Fresh raspberries are pricey this time of year but a little goes a long way.

Edited to Add: this can be adapted for dietary concerns. DH is in a low-cholesterol diet now, and I am using Kozy Shack natural pudding, and No-Pudge Brownie mix made with fat free organic vanilla yogurt.
 
Mini Pumpkin Cheesecakes- no baking



2 of the no bake chessecake mixes
2 cans pure pumpkin

mix cheesecake according to directions add 1 cup pure pumpkin at the end and mix

I use muffin pans with cupcake liners
press small spoon of graham cracker into bottom of each liner and fill with topping

can add sprinkle of cinnamon just before serving

this holds up good for 2 days in fridge and is yummy

Just wanted to second Kozy Shack pudding. SO is very particular about not consuming red dye (which is in sooo many things, including most chocolate pudding mixes). The Kozy Shack pudding is safe. Another brand for those looking to skip the dye is Inspired Cuisine European Style Mousse Mix. This one is slightly more difficult to find, at least in my area. We have 3 Publix supermarkets within about a 10 mile radius of our house and only 1 of them "occasionally" has it.

could you make the "easy" cherry cheesecake using crushed pineapple?

I don't know why not. I think you could use any topping you want. I thought about using blueberry pie filling to top it for Christmas, but I'm only making one, so I think I will stick to the Cherry.
 
Another easy and super yummy dessert is something I call,

"Cherry Stuff"

1) Pour 2 cans of cherry pie filling in a 9X13" pan.
2) Open a box of yellow cake mix and spread the dry cake mix evenly over the cherry pie filling.
3) Melt a stick of butter and spoon it over the dry cake mix.
4) Bake at 350 until the top is a golden brown.

Can you say "YUM?" It makes the best cherry cobbler. Take it to a potluck or party and you'll hear, "Who made this cherry stuff?" -- which is how it got its name.
