Hope someone can help!

I am throwing a fiesta-themed shower for a couple, and need a good recipe for a 120 oz pitcher. Normally in this case I'd do something with tequila, more lime-ish, or a sangria, but the person I'm throwing it for hates tequila and wines. She does, however, LOVE coconut drinks (esp. pina colada)...with a few stipulations:

1) can't require a blender or anything frozen except ice
2) no banana anything
3) no herbs/mint
4) coconut taste needs to be obvious

I know I could just do a typical pina colada in a pitcher, but was hoping to find something a little more interesting.

I've been taste testing various recipes (oh how I suffer for my friends, ;) ), and while I love girly drinks, so many of them are still too crazy sweet for even me, are full of HFCS syrupy ingredients, or go the flip side to way too strong. It's amazing how hard it seems to be to find a simple medium.

Does anyone have a tried and true recipe they can pass on? I've searched high and low.
 
I havent tried this, but I thought it sounded really good. The directions call for freezing it overnight and using it in its slushy form, but I dont see why you cant just mix it all and use it the way it is over ice:


2 (46 fluid ounce) bottles cranberry-raspberry juice
1 (32 fluid ounce) bottle pina colada mix
2 liters raspberry ginger ale soda
In a large plastic container, combine cranberry-raspberry juice with the pina colada mix. Freeze overnight.
Remove from freezer 30 minutes prior to serving. To serve place frozen slush in punch bowl and slowly add raspberry ginger ale.

*some of the reviews said to remove more than 30 minutes before if you do the freezer part. (closer to an hour before)
 
I have made this lots of times, using the blender as the recipe directs you to, but I don't know why you couldn't mix it and try serving it on the rocks. It is delicious.

On a side note, are you the only one preparing drinks? I was just curious but, could you make a small batch of a coconut drink for your friend, and make your sangria or margaritas for everyone else? Honestly, I think that more people DON'T like coconut drinks. I am sure you have your reasons, and I am not trying to judge or anything, but I was just wondering.

How does your group feel about gin and tonics? Very summery, not wine or tequila? You still use limes! I am sure you have thought of it also, but they have great Mexican beers available now, very fun for a fiesta.

I used to get this one at Chi-Chi's all the time, I don't know if this is thier "official recipe" but if you are "testing" you might want to try this. Again, blend it at first and try on the rocks.

1/2 pint Rum
1/2 pint vodka
1 can frozen lemonade
1 can water
1 48 oz can unsweetened pineapple juice
12 oz apricot nectar
1 bottle champagne

You could probably put in coconut rum in this. Otherwise it is a good, stout, fruity punch.
