DDP TS menu

To some degree, yes. I am an app + dessert kind of girl... Or maybe app + soup. DDP is going to limit you to an entree, or sometimes a prix fixe meal.

Generally there won't be "off limits" entrees or anything, though.
 
There isn't a separate/limited menu for DDP guests. As noted above, you are limited to your entitlements, of course (entree, non-alcoholic beverage, dessert; appetizer as well on Deluxe), but in general, there are no exclusions.

The limited exceptions tend to be "for two" items, combination meals (such as the "feasts" in Morocco), and at signatures, extremely high-priced entrees (> $75) featuring exotic/expensive ingredients such as Wagyu beef. The latter two categories are usually available for credits plus surcharge, though, and "for two" items can sometimes be ordered by two people pooling their entitlements for that item.

You get the most variations/questions about inclusion/exclusion regarding appetizers on Deluxe - it's generally up to a restaurant as to whether items not specifically in the "Appetizers" section of the menu (salads, soups, flatbreads, sushi, etc.) are included or not.
