I am going to WDW in May and using the DxDDP, so will have 2 snacks/day. I am not much of a snacker, so usually have most of my snacks left over. I usually go Goofy's at DTD on my last day to get stuff to take home. However, this trip the only day I could get Le Cellier was for my last day for lunch. I want to keet the ADR. The only day during the week that I am going to DTD is my very first day, so won't be able to pick up snacks prior. My ADR at Le Cellier is at 12:00 noon. I'm staying at POFQ. My plane leaves at 6:30pm, so I guess my DME pick up time would be around 3:30pm, so would need to be at POFQ by around 3:00pm.

My question is: would I have enough time to eat (appetizer, entree, dessert) at Le Cellier if I get there at 12:00 (as soon as they open), then go to the International Gateway to catch a boat to Boardwalk, then a bus to DTD, run into Goofys to get my snacks, then catch a boat to POFQ in time to catch my 3:30pm DME bus? If so great, but if not, what could I grab in Epcot to use up all my snack credits that I could carry on the airplane?

No you will not have enought time. Any bus from any resort takes FOREVER to get to & from DTD. I know norway will box your items for you and I'm pretty sure France does too. Isn't it possible to catch the DME bus from Boardwalk? The bakery has some yummy snack credit options.

If there is time when lunch is over, I would go out the Beach Club Lobby and take a cab. It would be much faster. Then you could take a cab bck to POFQ. More $$$ but it is an option.
