DDP and Wine add on

I was wondering about the wine add on. Do you have to redeem the wine at a table service meal or can you redeem at a hotel. Reason why I am asking is that I am going to WDW on Christmas and then a Dream cruise. Since I had planned on taking alcohol on board with me, I thought I could take the bottles I don't drink with me on the cruise. Its me and my son going but I am the only adult.
