DDP and length of stay ????

Ok, here's my scenario. I am looking a Disney package for 5 nights at Caribbean Beach w/ the dining plan and an 8 day hopper. The last three nights we'll be staying somewhere else. My question is, if we don't use all our dining vouchers by that last day are they gone or can we still use them those last 3 days that we'll still be in the parks? Thanks!

The dining plan credits are available for use until midnight of the day you check out of the Disney resort.
