Do all the daybeds pull out to beds? Is this like a full size mattress? Also, the bunkbeds - are they like full size as well so an adult could sleep on it?
 
It depends on the daybed. Most of the daybeds at Deluxe resorts actually fold out to a single bed, sleeping one. Sofa beds at DVC villas tend to be doubles/queens. Most of the murphy beds are not full width or full length.

Most of the bunk beds are NOT full length. Tall adults will generally be uncomfortable.

What resort are you specifically looking at?

i've slept on all at art of animation. main bed very nice, murphy bed was suprisingly comfortable. Couch bed was the least comfortable, but still not bad. length and width are fine, it's just the thickness of the matress.
 
Generally, if you see the word daybed on a room description, they're talking about a twin-sized mattress. If a room has a sofabed, that's a full or queen sized mattress, depending on the resort. Bunk bed mattresses are roughly twin-sized in terms of width, but shorter.

I'm going to say no to this one. I slept on the pull-out at AoA and have never been so uncomfortable in a Disney bed (and I've slept on the DVC pullouts, too!). The bedding itself at AoA is just really, really uncomfortable. I got little to no sleep at AoA. I've slept on the daybeds at the deluxes (CR, Poly, BC) and they were very comfortable (for a 5'2" adult!).
