Dallas Area- What to do?

We're planning a spring break trip to Dallas. Any advice on where to go/what to do? We'll probably stay at the Galleria unless someone can recommend a nice hotel with an indoor pool (NOT the Great Wolf Lodge!).

Fort Worth Stockyards, Fort Worth Science Museum, Fort Worth Zoo, Cowgirl Museum, Amon Carter Museum, Water Garden, Tarantula Train
Dallas - Science Place,McKinney Trolley

My ds love the Traildust steakhouse and the giant slide.

Mesquite has the Rodeo and the Ripleys Museum

I'm not sure about hotels....have you looked into the Gaylord Texan? Its an amazingly beautiful hotel/resort. Depends on your budget, but definitely worth checking out the website.

Some places I still love to visit in Dallas, even though I live here:

The Fort Worth Zoo (really great - one of the top nationally ranked zoos)
The Dallas Arboretum (botanical gardens, very beautiful)
Fort Worth Stockyards (very Texas!)
Shopping! The Galleria is great, but there is a huge outlet mall in Allen, which is only about 30 minutes from downtown.
Nightlife! You'll probably hear about Deep Ellum, but I think Greenville Avenue is much better.

Some of my favorite places to eat:

La Hacienda Ranch (there are a couple of these in the DFW area, they have great Tex-Mex food and amazing margaritas)
My husband suggests Babe's Chicken
Saltgrass and Traildust are also good steak places.
