Cut-out Cookies - I need a new recipe, any suggestions?

What I'm after is a recipe for cut-out cookies that after baked are not crispy, a little soft but still able to be frosted.

I tried a new recipe last night that had you bake them at 375 for 7 - 9 minutes and then cool on the pan for 2 minutes. I baked them for 6 minutes, taking them out before the were even the tiniest bit brown, and still they're cripsy.

DH likes them crispy so they won't last long but I prefer a softer cookie. Any suggestions?
 
These are my favorite cut out cookie recipe I use this all the time and my friends love it. 1 cup butter~ 1 cup sugar~ 1lg egg~1tsp. vanilla~2 tsp. BAKING POWDER~3 C flour~ cream butter and sugar, beat in egg and vanilla. Add baking powder and flour once cup at a time~ the last cup of flour do by hand its easier. Bake 400 for 6-7 min. I usually cut mine pretty thick and they are very soft. enjoy
 
won't help you this year but if your baking soda is old the cookies will be harder!
