Cruising in Nov. 2005- Have questions

Hello all,
I am going on my first cruise in November 2005. My DH and I have never been on a cruise so there are tons of questions that i have, but I will just ask a few here. First, we are going on the 7 day Western cruise with Disney and I was wondering what the best excursions are....I really want to swim with the dolphins at least, has anyone done that? Other than that one excursion, what were your favorites??
What is the most important thing I need to know before going on the cruise? (I know I need a passport and all)

When can I make reservations for the spa/Palos ect? We are going to get the Romance Package so I don't know if there is a different time you can set up reservations since we are going to be paying for the spa stuff and dinner at Palo's

We aren't bringing the children with us (we have a 5 year old and a 2 month old) and so it will just be us adults....What is the best thing to do when it's adults only?
