Crowds around end of may/beginning of june? Busiest rides?

We are planning a trip next may/june to disney and universal.
Our planned days for Disney are Wed, May 29th-Sat June 1st, anyone been around this time, how are the crowds?


Also, it may not matter, but are there certain days that some parks just seem busier? I saw a couple people say MK seems to be always busy on Monday, that doesn't affect us, but anything like that for the other parks?
Were planning HS on Wed, MK on Thurs, AK on Fri and Epcot on Sat.

And last question, what are the busiest rides for each park that we should head to first, such as in Epcot, Soarin seems to get busy and long quick.
