We went over New Years in 2013 and crowds were extremely high. We knew that was going to be the case going into it. Since we had been several times and did not care much about the riding the rides and just wanted to be there for the atmosphere with our 9 month old, it did not bother us too much.

If your goal is to ride everything and not be bothered by crowds, I would go during a later time. If crowds don't bother you much, then go for it! We loved seeing the Christmas lights and and experiencing WDW in the winter!

NYE is like nothing you have every seen before. Wall to wall people. Traffic jams getting in. Full parks. Full lots. Only exception is AK which is the least crowded.
This past year on Dec 31, we did EPCOT early for a few hours and then hopped to AK for the afternoon. We stayed out the parks at night and did hoop dee doo review instead (kids were 8 & 7 and not late night kids anyways). We stayed away from the crowds for the most park except for some extra vehicle traffic.

We have done early mornings on Jan 1 the last few years and it's actually not too bad for the first few hours I guess due to lots of people having late nights.

As already noted, this is the busiest time of the year. It's still going to be crowded Jan 2,3,4 through the weekend.

NYE was insane this last year the day after it was very cold and raining and beyond dead at the MK I was able to see the fireworks front and center and had no problems ( I am 5 foot nothing) seeing the projection it was amazing and so dead. ( but I would not count on this ).
