Critique my ADR/FP+ plan?

Hello! I'm working on my plan for a 5-day/5-night park hopper trip to DW in August. I loved planning the ADRs for our last trip, but I'm finding the idea of having to reserve rides too a little daunting. Does anyone have experience making FP+ reservations? Is it easy to get the rides you want?

Our contingent includes myself, my mother, my son (12), and my nephew (11). Any advice would be appreciated!

Sunday, Aug 3 - EPCOT
ADR: Teppan Edo

Monday, Aug 4 - Hollywood Studios
ADR: Mama Melrose - Fantasmic Dinner Package (Not excited about this restaurant, but I've read that Fantasmic FP+ is a waste as it doesn't have a designated seating)
FP+: Toy Story Midway Mania
FP+: Tower of Terror
FP+: Star Tours

Tuesday, Aug 5 - EPCOT at Rope Drop for Test Track then Magic Kingdom
ADR: Be Our Guest
FP+: Space Mountain
FP+: Splash Mountain
FP+: Main Street Electrical Parade

Wednesday, Aug 6 -Animal Kingdom
ADR: BOMA (Breakfast or Dinner?)
FP+: Expedition Everest
FP+: Kali River Rapids
FP+ Kilimanjaro Safaris

Thursday, Aug 5 - Hollywood Studios (surprisingly, our last trip we all agreed that HS was our favorite park)

FP+: Toy Story Midway Mania

FP+: Star Tours
