We had dinner a few times at the Coral Reef restaurant in Epcot. I had their New York strip with beef demi-glace and I loved it. I just bought myself a jar of beef demi-glace from Williams Sonoma. The steak - as I remembered it - had the glaze seared on - yet isn't a demi-glace a sauce? I guess I can make it as a sauce and also brush it on last minute for a final searing on the grill. Has anyone cooked with a demi-glace and could you share any tips?
