Confused with Estimated Event Budget

I was looking over my estimated event budget today, and I was really confused by the numbers. Is each item taxed in some way? For example, I have 55 people for a beer and wine package for 4.5 hours at 32.50 per guest and the total came to $2,303.47. Well 55x32.50 is $1787.50. That's a difference of $515.97. Can someone tell me if I'm figuring this out wrong? Thanks!
 
6.5 percent tax and whatever it is for gratuity. I think it was 20% when I got married.
 
32.50 x 55= 1787.50

1787.50 x 6.5% tax = 116.19

1787.50 x 21% gratuity = 375.38

375.39 x 6.5% tax = 24.40

Total: $2303.47

You figured right...the gratuity is taxed for all food and beverage
 
For anything that is served, like your meal or drinks you are charged a 21% service charge and then they tax the entire amount.

Drink price + service charge (21%) then they tax that.
