Congrats for joining the challenges. You can lose the weight! And I bet after those 10 lbs are gone, those jeans will fit just fine! :goodvibes

When I have to make something for a party, I always make something I don't like (like chocolate cake) so I won't be as tempted... How did you do at the food fest?

Thanks for all of the well wishes! I'm starting to feel much better. This cold just wants to hang on forever! :confused3 I did pretty well at the feast at work. There was so much food there that I got stuffed just looking at it! :rotfl: We'll do it again in 2 weeks for Thanksgiving. Huh! Hope I can make it though the holidays!

I just realized that I forgot to post the eclaire cake recipe. I'll have to find it & hopefully will have it posted by tomorrow. It real easy, no-bake. :teeth:

Now I just need to get back in to the "working-out groove." I've been feeling so yucky that I haven't accomplished much in the last couple of weeks. :)
 
The recipe, about time huh? :teeth:

ingredients: 20 whole graham crackers
2 cups cold milk
1 pkg (6 serv. size) Vanilla instant pudding
1 3/4 cups thawed cool whipped topping
cholocate frosting

Line 13 x 9 in pan with graham crackers. Pour cold milk into bowl. Add pudding mix. With electric mixer at low speed, beat until blended. Let the mix stand for 5 minutes. Then blend in whipped topping. Spread 1/2 of the mixture over the crackers. add another layer of crackers. Top with the remaining mixture and add remaining crackers. Chill for 3 hours. Carefully spread frosting over top layer of graham crackers.

Of course you would use all low fat products. :teeth:
 

Mmm, that sounds yummy! And not too bad on the calories either, especially with Cool Whip Free, SF pudding and skim milk! Thanks for sharing!
 
Oh that recipe sounds awesome!!!! I have made eclairs over a campfire but this is so much easier!!!!! I many have to make that for bingo some week.

I hope you all enjoy the recipe. :) Frogmommy, I am getting back to my routine now that my 2 week long killer cold is gone. This weekend we have another hospital wide feast at work & I've been assigned to bring desserts again. I'll have to go digging for another recipe.

The good news is that I now have a WISH buddy, which I am tickled about. :banana:

Oh & my scale, which I just bought a couple of weeks ago, is not working. I have tried everything. I think the kids may have knocked it around too many times. Maybe it's for the best, no one needs to weigh themselves 20 times a day. :teeth:
 
I just have to tell you that you have me beat - weighing yourself 20 times a day :rotfl: :rotfl: :earseek: :teeth: :teeth: I'm probably pretty close though!!!! LOL

Hey MagicalMom! I know what you mean about getting back into a routine. The holiday and being sick threw me for a loop and I feel like I am just now getting it together.

That's neat that you have a buddy now. I hope you get the scale figured out. I think I would be nuts if I weighed myself 20 times a day!

Thanks for the well wishes everyone! I bombed during the holidays but lucky didn't gain anything! :cool1: That's the only bright side. So, I'm back on the diet. Hitting the gym again tomorrow. Even got a great Wish Buddy to help me along. This time i'm not giving up. I just know I can lose weight before summer gets here! :sunny:

Thanks Frogmommy, I've been doing good so far. I haven't had much tome for the gym but hope to make it there tomorrow. Swimsuit season will be here before we know it!
