Is there still a way to combine gift cards? I know there used to be, but thought something changed with that…

Another question…..since park tickets need to be paid in full if not part of a package, is there any reason not to just do 3 separate transactions (1 for each persons tickets) so that I can get the optimum gift card discount deal?

You can still combine GC at Disneygiftcard.com - they changed the website some, but it still works great. And your idea to do separate transactions makes sense to me, especially since one gift card can hold only $1000 max, and you’re likely to need more than that for 3 tickets, depending on how many days they’re for.

Only downside is if you want to hold on to the gc in case of a refund you have 3 instead of one. Disney only refunds under extraordinary circumstances but personally I keep the gc just in case such a thing happens. I put a sticky note on each one with the transaction date, amount and whose ticket it was.
