College cooking, HELP

Two college kids, One who loves to cook, one who loves forgien food. We need them to be cheap and easy to make meals. I also would love and grab and go meal ideas you have. My sister is going to be working 20 hrs a week and going to school, I will be attending school and working 30 hours. As you can see quick is good. I want to make my sister a really sweet cookbook for her birthday (a little gentle encoragment for her to cook). Also healthy simple recipies would be great. Any one got ""Must have" recipies they want to share?
 
Will you have access to a freezer and microwave?
 
That's not so bad then! Firt step, buy yourself a big deep frying pan - not quite a wok - with a lid and preferably able to go in the oven (Viners do a good one) - a good quality one will last you for ever. This can do you for mince (for bolognaise etc.) casseroles, stir-fries etc. Although mince and casseroles take a while, if you set aside some time at the weekends to batch cook you can freeze portions and re-heat in the microwave. Stir fries and noodles are really quick, expecially if you use frozen/ready prepared veg. And you can get a casserole in the oven then do something else while it cooks, or prepare it and either put it in a crockpot or set it on timer (if your oven has this option - mine does and its great to come home to a cooked casserole!)
You also need a big saucepan which you can use for pasta and soup -again, make soup at the weekend and freeze it. Pasta of course is really quick, and you can just throw in some fresh tomatoes and basil and top with parmesan for a lovely fresh supper.

My secret (!) recipe for a nice dessert - meringue nest with ice cream and tinned fruit (preferably peaches) - yummy and not too fattening if you use lemon sorbet instead of Ben and Jerry's chocolate cookie dough:rotfl2:
 

I'm on someone else's computer so I don't have access to my recipes at the moment...either my monitor or video card went bad. I'll get together some that I have on cards later. (Everything is on the computer, but a few are on cards also.)

I wanted to say that the biggest time saver for me was to pre-cook meats. I tend to buy boneless chicken breasts & hamburger in bulk. When I worked I started cooking the chicken and then shredding it - because I had time on the weekends - then dinner was much quicker to prepare. You can use chicken with bones in, it just takes longer to take it off the bones before shredding - but it's usually cheaper that way.

Chicken - If you have a crockpot you can do it in there, but you can toss it in a pot, cover with water, bring to a boil & then reduce heat and simmer while you study - a couple hours. You don't want to undercook it because it's harder to shred then. Put it in the refrigerator for a couple hours so it's cool enough to handle & shred it...store in Zip-Loc baggies in the freezer. Put just enough for a meal in each bag.

Hamburger - Toss it in a pan, break it up & brown. Make sure it's cooked through. Put a colander in a disposable container of some sort...like from a store bought pie, etc. Then pour the cooked meat into the colander to drain off the excess fat. (Besides being better for you, it's important to do this as the hot fat will melt your plastic bags creating a mess. BTDT ;)) Then pack in meal-sized portions in Zip-Loc baggies & freeze.

anyway...what about a crockpot? If you're busy, you can just throw things in like a pot roast or stew...leftovers are always good, especially with pot roast b/c you can make pot roast burritos! :) :)

p.s. sorry, just saw that piratesmate already said crockpot!
 
The recipes on the back of boxes are usually good and easy...for instance the chicken bake on the Stove Top box is very good and the bisquick recipes are good as well...I love the impossible cheeseburger pie. Campbell's has some good ones as well...HTH! :)
