I wanted to say that the biggest time saver for me was to pre-cook meats. I tend to buy boneless chicken breasts & hamburger in bulk. When I worked I started cooking the chicken and then shredding it - because I had time on the weekends - then dinner was much quicker to prepare. You can use chicken with bones in, it just takes longer to take it off the bones before shredding - but it's usually cheaper that way.
Chicken - If you have a crockpot you can do it in there, but you can toss it in a pot, cover with water, bring to a boil & then reduce heat and simmer while you study - a couple hours. You don't want to undercook it because it's harder to shred then. Put it in the refrigerator for a couple hours so it's cool enough to handle & shred it...store in Zip-Loc baggies in the freezer. Put just enough for a meal in each bag.
Hamburger - Toss it in a pan, break it up & brown. Make sure it's cooked through. Put a colander in a disposable container of some sort...like from a store bought pie, etc. Then pour the cooked meat into the colander to drain off the excess fat. (Besides being better for you, it's important to do this as the hot fat will melt your plastic bags creating a mess. BTDT

) Then pack in meal-sized portions in Zip-Loc baggies & freeze.
