CityWalk restaurant reservations

I tried making reservations at a Citywalk restaurant, but they are only open Thurs-Sundays right now. Will these hours increase over the holidays? The Theme Parks look like they will have longer hours, hopefully this will apply to dining because we will be there Mon-Thurs. and wanted to try a couple different places out.

SOme of those places are not opened during the week. Some are closed Mon and Tuesday
