We will be hosting our family Christmas on December 26th this year to due to work scheduled and other committments. I will have 12 adults, no kids at the house this year.

Since everyone will have already had Christmas Eve and Christmas Day meals I want to do a “snack and graze” layout of food instead of a sit down meal. Besides chips, dips and veggie and cheese trays I am looking for some ideas as to easy, fast food ideas (I don’t really want to spend all of Christmas Day in the kitchen prepping and cooking) and since food is the favorite subject of the podcast board I thought I would reach out for your suggestions. Anything I can make ahead of time and freeze would be great. I have a range of very picky eaters to very adventurous eaters on the family so lets hear your ideas and recipes.

For your adventurous members of the family..... nice thing about it is it keeps well in a crockpot - be sure to serve over corn chips!


Chalupa

Yield: 8 servings
1 lbs Pinto beans
3 lbs Pork roast
7 cup Water
1/2 cup Onion, chopped
2 Garlic cloves
-minced
1 tbsp Salt
2 tbsp Chili powder
1 tbsp Cumin
1 tbsp Oregano
4 oz Green chili peppers -chopped (one can)

Procedures

Put all ingredients in a dutch oven, an electric crockery cooker, or a heavy kettle.
Cover and simmer about 5 hours, or until the roast falls apart and the beans are done.
Uncover and cook about ½ hour, until the desired thickness is achieved.
Notes:
* a mexican meat and bean dish, similar to chili -- i got this recipe from "a primer on bean cookery" by the california dry bean advisory board.

While not a true chili, chalupa is a mexican-american favorite for a hearty lunch or supper.
It may be made ahead and reheated, and it freezes well.

This recipe may be served with corn chips and condiments (including chopped tomato, chopped avocado, chopped onion, shredded lettuce, grated cheddar cheese and hot sauce).

: difficulty: easy.
: time: 5 minutes preparation, 5-6 hours cooking.
: precision: no need to measure.

Any pasta dish (lasagna, baked ziti)

Meatballs in sauce in the crockpot are always a favorite- for this I buy the frozen ones- simple!

I often make artichoke dip- here is a super simple recipe
one cup each of mayonaise, sour cream, parmesan cheese and one can of artichoke hearts- chopped
top it with paprika and bake until bubbly. I serve it with scoops chips, takes literally 5 minutes to throw together and is very yummy!
 

Go to your local grocery deli.

They always seem to have just the right thing and could offer some tips if not.
 
I would second the meatballs. I go to Gordon's Food Service and get the swedish meatball sauce and frozen meatballs. They are always a big hit
