I used a recipe for chili which called for four cups of wine....it was too much.

Is there anything I can do to fix it?

that sure is a lot of wine. The only thing I can think of is to make another batch of chili without wine and add it to the first batch?? And then freeze half of the mixture for a later meal.

I would split the chili into two or three equal portions and dilute each with more tomato, onions and meat. If I didn't have enough extra ingredients on hand, I would still split the recipe into thirds, freeze two of the thirds separately with a note on the freezer bag to add more tomatoes, etc. Then I would take the last third of the chili and add more tomato, onions, meat, etc. the frozen beans might be squishy, but there would still be enough extra ingredients that it shouldn't be too bad.

Did you cook the alcohol out? That seems like a lot of wine - maybe cook it for several hours?

that is a lot of wine for a recipe. I would try to dilute it with tomatoes, tomato sauce, or maybe some beef broth.

Yes it does sound like to much.
I have seen recipes where you are suppose to add a Half of cup of red wine vinegar in the chili but with that said I have never added any kind of wine to my chili.

I can honestly say I've never put wine in my chili, I put a nice hearty porter in mine though. I would just break it down into smaller batches and add more tomatoes, beans, meat, heck everything BUT the wine. Wine in chili just sounds weird to me.

Where did you get this recipe? Are you sure it didn't call for 1/4 cup wine?

Throw it out and find a real chili recipe?

I have never in all my days put wine or heard of anyone putting wine in chili. Beer, maybe. Not wine.

Put the chili in a colander, rinse it off,and start again with your sauce and seasonings.Should be fine.;)

Were you able to fix it op? I would bet that there was a typo on the recipe and it was supposed to be 1/4 cup wine.

This was the recipe. I plan on draining most of the liquid and adding diced tomatoes, more kidney beans, maybe corn. I doubled the recipe.

1 1/2 lbs ground beef (15% fat)
1 tablespoon olive oil
1 chopped green bell pepper
1 chopped small white onion
1 minced garlic clove
1 (1 1/4 ounce) package chili seasoning mix
2 tablespoons chili powder
1/2 teaspoon cumin
1/2 teaspoon crushed red pepper flakes
1 (16 ounce) can diced tomatoes
1 (16 ounce) can ranch-style pinto beans
1 (16 ounce) can kidney beans
2 cups red wine
salt
pepper
1 -2 tablespoon sugar

Directions:
1 Saute onions and bell peppers in olive oil until tender.
2 Add ground beef and brown slowly over low heat, stirring often.
3 Add garlic and cook until ground beef is thoroughly cooked.
4 Add chili seasonings, chili powder, cumin, crushed red pepper, tomatoes, both beans and red wine.
5 Bring to a boil, then reduce heat and simmer for 3 hours.
6 After 3 hours taste and add salt and pepper. Then add sugar to round out flavor.
7 Best served with a dollop of sour cream and chopped green onions.

:joker: I bet it was! You'd need to set up a giant cauldron over a hot fire in the yard to get all that alcohol burned off.

Maybe you were supposed to share the wine with 4 of your BFFs?
