In WDW they have a few resorts that offer a kids club/babysitting in case mom and dad want to eat dinner alone one night. Do they have this anywhere at he three DL resorts?

There is something like that at GCH (but I think it's open to guests of all three hotels). It's called Pinocchio's Workshop I believe. But I don't know much about it except that it exists.

Pinocchio's Workshop is the same as the ones at WDW, at least it is the same as the one at AKL. It's at GCH but you can use it if you are staying at any of the 3 DLR hotels.
We use Pinocchio's every trip for a dinner at the Chef's Counter at Napa Rose. Our son loves it. They cater to his gluten allergy and they take the group to watch the DL fireworks. Call ahead to reserve a space for your child during busier times as it serves all three hotels. Similar to Aunty's at Aulani or clubs on the DCL and at WDW. A real value for the money knowing he is safe, has a great time and we get a fantastic relaxed dinner.
One thing to add after I saw the ages of your kids. Pinocchio's Workshop is for kids ages 5-12 so if you are going in the next 2 years, your youngest will be too young and by the time she is old enough, your oldest will be too old.

Not sure when you're going but be aware they are sticklers on age! We had reservations one year and took my daughter when she was turning 5 the NEXT DAY and they wouldn't let her in.
May not apply to OP, but also keep in mind you can hire an in-room sitter if your kids aren't the right age. We've done that a couple of times. They're not "official" DL or sanctioned by DL but we had good experience with ours. Both times they were older women -- I don't remember the name of the agency but I'm sure it's here somewhere.
