I had to laugh at the Podcasters amazment of chicken and waffles served together. This is a very traditional soul food combination. At the right restaurant this is a yummy thing to order in my humble opinion but I guess I am used to "weird" southern food combinations. I am not sure if this should be served at a Louisiana style restaurant but maybe they thought since it is soul food it would fit in. And if you want to be really authentic you should use cane syrup instead of maple syrup on your waffles - or biscuits. (Funnily enough, cane syrup was developed in Louisiana - so maybe that is the origin of chicken & waffles being on the Boatwright's menu. I doubt it but you never know.)
