Chicken dish question and PS question....

We decided on a dual plate for our reception. We are going with filet mignon with maybe the red wine demiglace. We want chicken with it but aren't sure what kind. What are my options, or what did you have for your reception?

Also, when we go to the PS can we have them make a plain filet mignon and then a bunch of different sauces to try it with?
 
We wanted pretty much the same as you, and I'm really glad we did a tasting session.

We tasted the filet with red wine demiglace and I thought the sauce was bland. We went with blackberry demi for the wedding, and it was the perfect taste.

We tried two chicken breasts. One was "airline" breast (which has skin and the bone). The chicken was moist and tasted great, but I didn't like the idea of skin and bone at my fancy plated dinner. The non-skin and bone breast was really dry. We ended up going with Mahi Mahi with Limoncello beurre blanc, and it was great!

We did have the parmesan crusted chicken breast with mushroom sauce at our EPCOT welcome dinner, and that got a lot of good reviews.
 
We were originally thinking of just serving chicken and tried the thyme marinated chicken breast and the parm encrusted chicken breast and honestly they were just ok. I also did not like the idea of the thyme chicken having the skin and bones at our fancy sit down dinner. They weren't by any means bad, but if we are going to be paying for all of this food for our guests we wanted it to be great.

Then we tried the filet and it was so good. We also tried the shrimp and scallops in a pino grigio sauce and it was excellent. hth!
 
we had them make a plain filet with a peppercorn sauce and then we tried the almond crusted chicken from kona cafe, we had both these and the sauces were served on the side incase anyone didnt like them
 

Thank you so much! I am happy to know they can put the sauces on the side. I can't do the filet and a fish because most of my guests won't eat the fish and DH and I don't eat fish either. I have been trying to rack my brain about any chicken dish we have had at WDW that we have liked and I can't think of anything!LOL I also wouldn't want chicken on the bone.
Any other suggestions? Could I just serve the filet? Is that tacky and not enough food? I know I don't have any vegetarians and I am pretty sure everyone likes filet mignon. Hmmm, I am just confusing myself more!;)
