Cheddar cheese soup (beer) question

I've volunteered to make a batch of this for a women's meeting our church has every month. It's so yummy I can't wait to eat it again.

I found the recipe at AllEarsNet but it doesn't specify how many servings it makes. Can someone tell me?

Also, is there an alternative to beer? Non-alcoholic beer? We are LDS (Mormon) and I can just imagine me standing in the kitchen at church pouring beer by the cans into this soup WOOHOO!!! What an Enrichment night that will be!!

To be honest, I've never cooked any recipe that called for alcohol but I understand that the alcohol cooks out, right? Sorry if that's a naive question.

I have one version of the recipe that says how much it makes:

It calls for 3 cups milk and 1/2 cup beer & says it serves 4 to 6.

I've read also that the alcohol cooks off. I rarely cook with it, so I can't say for sure. Under "Alcohol Substitutions" I have this for beer:
Beer or ale - For light beers, substitute chicken broth, ginger ale or white grape juice. For heavier beers, use a stronger beef, chicken or mushroom broth/stock

However, try doing a search for this soup on this board & the Restaurant board. I'm fairly certain I've read that not only does it need the beer to "taste right" it needs
the specific brand.

You can safely include alcohol as the alcohol is volatile and evaporates off at quite a low temperature (so you don't need to ruin the flavour by boiling it). I would suggest that the substitutes offered are OK for making punch and such like but for a cooked dish you get a better result with the true ingredient (just make sure no-one sees you buying it )
