How early should I check in if I hope to get a waterside table with an 11:30 reservation for 2?

With an 11am opening I wouldn't count on a waterside table until the first guests are done eating. But it would depend on how crowded they were at 11am. I think that the availability of dining packages and the recent change to PTN have shifted what time people book there, so hard to say at this point. Your best change for getting to choose your table is to book the first reservation of the day. Otherwise you'll get what's available. Even if willing to wait there's no guarantee your preference will be available.

We arrived at 11am for our 11:30 ressie. We went to check in and were told we couldn't check in yet and to come back in a few minutes. We waited outside and went back up a few minutes later and checked in. They seated us around 11:20am even though they didn't officially open until 11:30am. We were waterside (luckily because most of the waterside was set up for a large group). Even if you aren't exactly waterside being in the first seating group you should get nice seats. If we went again we'd be there at 11am if we had an 11:30am ressie. Any earlier would probably be overkill.

I would say definitely be there by 11:15am, but you don't need to be there earlier than 11am. The couple of times I have gone with 11:30 reservations, everyone who had reservations at that time was able to get waterside, didn't even have to ask (though I suggest asking anyway of course!).
